Paul Bakery, an internationally renowned French bakery and patisserie chain, selected a ca.1920’s building in Georgetown for their second location in the District of Columbia. cox graae + spack architects designed the renovation of this building coordinating with Paul’s corporate designers in Paris. The first floor was lowered to grade to accommodate accessibility as well as product display, sales, seating, and the primary kitchen. The second floor is transformed into a skylit dining area with large windows and French doors overlooking Wisconsin Avenue. The basement was expanded to house food and dry goods storage and bakery support space. Extensive review and approvals were successfully negotiated with the Georgetown Advisory Neighborhood Committee, Old Georgetown Board, and the Historic Preservation Office.
